There are two constants at my family's dinner table: one is wine; the other is high quality extra virgin olive oil.

It was a natural step for me to start to produce my own oil. Sourced from my family's farm at Waikerie, our Mitolo olive oil is made in the ways taught to me by my father and handed down through generations of my family. We strive for freshness, brightness and purity of flavour.

The Good Oil
 
Our extra virgin olive oil is100% cold pressed produced using a state of the art olive press, purchased from Italy. We grow ten different Tuscan olive varieties on our farm at Waikerie, each variety providing a unique flavour profile to the overall blend. These varieties are picked at different times when they are each at their optimal flavour. The press is located at the farm so the olives are pressed within hours of being harvested to lock in the freshness.

Tasting Notes
Intense aromas of ripe apple with hints of banana. Mild round sweet flavour which finishes with notes of green almond and a refreshing pepperiness.
