The Vermentino grapes are harvested in two stages; the first to achieve optimum acidity and pure, bright fruit flavours, and the second three weeks later to achieve richer, deeper and more complex fruit flavours. A wild, cool ferment follows, with 5% barrel fermentation in 2-year old French Oak adding roundness, texture and a complete structure. Once ferment is complete, the wine is stabilised and filtered before being bottled.
