VINEYARD INFORMATION
Vineyard Notes
Located at the southern end of McLaren Vale, about 4km east of the coastal town of Port Willunga, the soil here is heavy grey loam mixed with black Biscay clay and sits above ancient Gnaltinga formation bedrock. Strong vine growth in spring is tempered by summers dry winds, developing pure, bright and savoury fruit flavours that are tempered by cooling afternoon sea breezes. VINE AGE: 10 years ELEVATION: 25m above sea level SOIL TYPE: Black Biscay Clay
WINEMAKING & TECH INFORMATION
Winemaker Notes
The Vermentino grapes are harvested in two stages; the first to achieve optimum acidity and pure, bright fruit flavours, and the second three weeks later to achieve richer, deeper and more complex fruit flavours. A wild, cool ferment follows, with 5% barrel fermentation in 2-year old French Oak adding roundness, texture and a complete structure. Once ferment is complete, the wine is stabilised and filtered before being bottled. HARVEST DATE: 15 February, 10 March 2016 MATURATION: 95% stainless steel, 5% 2-year old French oak ALCOHOL (Alc/Vol): 12.5% RS: 1.0G/L pH: 3.1 TA: 6.2 g/L
