Serpico was a famous New York police officer that wasn't afraid to 'work against the grain' and in doing so exposed immense depth of police corruption in the era. With Mitolo Serpico we aim to step outside our peers and redefine the accepted style of Australian wine.

Vineyard
The Cabernet Sauvignon grapes for Serpico were hand harvested from the Willunga district of McLaren Vale, South Australia where Black Bay of Biscay crackling clay is renowned for high-class cabernet.
Vintage - 2002
The 2002 vintage in McLaren Vale has produced some exceptional wines despite lower than average yields in many of the vineyards with many winemakers comparing the 2002 vintage with the 1990 and 1998 vintages. The summer was South Australia's coolest on record and allowed for a cooler ripening period for all varieties meaning flavour ripeness was gained at high sugar levels, while good natural acidity was maintained.
Winemaking
The grapes are hand harvested onto 10kg drying racks and left for 5 to 7 weeks, in the traditional Amarone method to develop flavour concentration and viscosity. The wine is fermented on skins for 2 weeks, then macerated for a further 2 weeks prior to pressing. It is then transferred into 100% fine grained French and American oak to develop supple & savoury characters over a 12-14 month maturation period.
Tasting Note
Vibrant brick red with purple hues. The nose shows upfront blackcurrant/cassis with whisps of cedar, nutmeg and spice. Dense and yet restrained with the trademark elegance of finely tuned Cabernet. Traditional vinification has developed rich supple tannins with a distinct savoury note. Will cellar well for 15 years.
