Serpico was a famous New York police officer that wasn't afraid to 'work against the grain' and in doing so exposed immense depth of police corruption in the era. With Mitolo Serpico we aim to step outside our peers and redefine the accepted style of Australian wine.

Vineyard
The Cabernet comes from the Willunga district of McLaren Vale. The grapes are grown on black Biscay clay and hand harvested at around 13 Baume onto 10 kg drying racks. Yield is around 2 tons an acre. Harvested from 5-7th March 2004.

Vintage - 2004
A longer than usual vintage attributed to cool conditions during ripening which was welcomed by winemakers who reported the production of red as being extremely high quality. Cabernet Sauvignon reached full flavour ripeness, achieved excellent colour, and tannin with wines exhibiting great varietal flavours and aromas.

Winemaking
The grapes were left to dry on the 10kg drying racks for 8 weeks in the traditional Amarone manner to concentrate flavour. The wine was fermented on skins for 2 weeks and then left to macerate for a further 3 weeks prior to pressing.

Aged in 100% new French oak barriques and hogheads for 9 months.

Tasting Note
Vibrant Purple colour. The fragrant nose shows blackcurrant, Notes cassis and mulberries aromas with a touch of cedar and spice. This opulent, rich and powerful Cabernet displays lush red and black berry fruits complexed by chocolate, mocha and forest floor characters. This mid-palate shows immense power and concentration which are followed by pillars of ripe, silky tannins. The seamless integration of oak, tannin and fruit allow this distinguished wine to be drunk now.

Cellaring
Will age well for 15 -20 years with careful cellaring.
