Subtle dried spice notes on the palate with savoury tannin and a seamless texture. Flavour follows aroma, with a riot of vibrant red fruit characters dancing across the palate. It is light to medium bodied, with subtle tannic grip tightening up a finish that is drawn out by fresh, lively acidity.

Vineyard Notes
Sourced from a mature vineyard situated near the town of Balhannah, in the Northern end of the Adelaide Hills, provided the fruit for this bright and delicate Pinot Noir. High altitude, skeletal soils produces Pinot Noir bunches with intense flavours and bright acidity.
WINEMAKING & TECH INFORMATION
Winemaker Notes
The fruit is carefully hand harvested, crushed, destemmed and placed into a two tonne open top fermenters where it is fermented on skins for two weeks. A portion of the hand harvested bunches left whole in the wild yeast ferment, contributing a fragrant, spicy background lift to the fine boned red fruit flavours. Neither fined nor filtered, adopting a hands off approach to capture the essence of this pristine slice of the Hills. Pressed to four year old French oak hogsheads for natural malolactic fermentation and matured for eight months in oak before bottling.
